Bacon Wrapped Mini Meat Loaf

I love bacon, plain and simple. I am of the philosophy that bacon makes the world go ’round and adds excitement to everyday dishes. I’m happy my local grocery store stocks both the center cut and thick cut HORMEL® BLACK LABEL® Bacon. When the family is in the mood for bacon, I’ll grab a pack or two of the center cut bacon to bake in the oven. I find baking the bacon much easier than frying it in a pan. So much less hassle and clean up.

I like that the thick cut HORMEL® BLACK LABEL® bacon is a bit longer of a strip than the center cut variety. The size was great for for wrapping around my mini meat loaves.

Bacon Wrapped Mini Meat Loaf

Ingredients
  • 2 lbs lean ground beef
  • ¾ Cup salad dressing spread or your favorite mayonnaise
  • ½ Cup Italian bread crumbs
  • 1 package onion soup mix
  • 1 package BLACK LABEL® thick cut bacon
Instructions
  1. Preheat oven to 385 degrees F.
  2. Prepare a baking pan with a wire rack insert with a light coating of cooking spray on the rack.
  3. In a large bowl, combine ground beef, salad dressing, bread crumbs, and onion soup mix. Mix thoroughly.
  4. Divide meat mixture into 8 equal portions.
  5. Form each portion of the meat mixture into a small loaf.
  6. Wrap each loaf with a strip (or two) of bacon, so mini loaf is covered.
  7. Bake for 25-30 minutes until meat loaf is cooked through.
  8. Remove meat loaves from oven and turn over.
  9. Raise oven temperature to 425 degrees F and return mini loaves to oven to crisp bacon 5-7 minutes. Turn loaves again and repeat so all wrapped bacon is crisp.
  10. Remove from oven to set 3-5 minutes, and then serve with your favorite sides.
