We love routine in our house. It’s part of what keeps us moving steadily when we are on the go all week. On weekends, however, the routine relaxes a bit. No one is awake before 7:30 am. Baby is the earliest riser in the house, and she is followed closely by DH. I am very lucky my husband heads downstairs to get started on breakfast, while I sleep in a bit.
Every weekend DH grabs the big griddle from the top of the refrigerator, gets out his ingredients, and large mixing bowl and makes pancakes from scratch. I said I was lucky y’all. I meant it. I also have absolutely nothing against box mix. We used it before making them from scratch, but DH is so proud of himself, I just go with it. By the time I get up, and grab my cup of coffee, the first batch is made. I jump right in and get the kids their pancakes buttered, cut, and ready for topping. The usual is syrup or powdered sugar, but occasionally, I’ll mix up a special quick glaze that I use for my bundt cakes.
As much as I love the lazy weekends, they aren’t all that way. Sometimes we head out early to an event or even the park in the summer before it gets too hot. - Aunt Jemima Frozen Breakfast Mini Pancakes
- Sliced fresh strawberries
- Glaze
- 1 Tablespoons of butter
- ¼ Cup powdered sugar
- 1-2 Tablespoons of crème brulee flavored coffee creamer
- Melt butter in microwave safe dish
- Stir in powdered sugar until texture is almost crumbly in texture
- Add flavored creamer and stir to desired consistency for drizzling.
- Mixture should be smooth and opaque
- Set glaze aside
- Microwave Aunt Jemima Frozen Breakfast mini pancakes according to package directions
- Top with sliced strawberries
- Drizzle with glaze
- Enjoy
