I’m also one of those people at a party that loves to socialize more than eat, so mini morsels are my favorite. Offering a variety of finger foods for guests is ideal. No one feels they have to stop and sit down to eat a full plated meal. That’s where these Cheesy Taco Biscuit Bites come into the picture. Typically, I try to stock up on my favorite appetizer ingredients well in advance of the busy holiday season. In a pinch though, I have been known to also grab some pre-made, oven ready appetizers at my local Walmart. Call it being prepared just in case guests stop by and I need to whip up some quick snacks. Originally, I envisioned the bites to be similar to a sausage ball type appetizer, but after mixing the ingredients, I ended up improvising a bit. The mixture was so sticky! I had to lightly spray my hands with baking spray just to keep the batter from sticking to me instead of being in the bite size snack.

Once baked, the rounded balls spread into more of a biscuit shape, hence the name Cheesy Taco Biscuit Bites. That was perfectly ok, once I tasted them. Yum! They had a slightly fluffy texture from the baking mix so they weren’t too heavy or filling. They are a perfect party food.

Ingredients
  • 3 Cups baking mix
  • 2 Cups shredded Mexican blend cheese
  • 1 packet of taco seasoning
  • 1 16.2 oz package of MorningStar Farms® Grillers® Crumbles™
  • 1½ Cups of Milk
Instructions
  1. Heat oven to 350ºF.
  2. Line a baking sheet with parchment paper (or lightly grease bottom and sides of of baking sheet if you don 't have the parchment paper)
  3. In large bowl, stir together all dry ingredients and stir to combine.
  4. Add crumbles into dry ingredients and stir to combine.
  5. Add milk slowly. Add about ½ Cup at a time while stirring mixture to form the cohesive mixture
  6. Once batter is mixed, use clean hands to shape mixture into 1-2 inch balls. Place balls on baking sheet.
  7. Bake 20 to 25 minutes or until brown.
  8. Service warm with sour cream and salsa on the side to dip.
