Happy Sunday everyone!
I am still in catch up mode since school let out last week, but I made sure I was signed up this week’s #SundaySupper because the theme is a favorite of mine – Summer Berries! I love summer fruit and veggies in general. They just taste so much better. We usually try and get to a U-Pick farm for strawberries, but I think we missed it this year. Guess we will just have to make sure we get out to pick some blueberries.
My girl, Nicole from Daily Dish Recipes, is hosting this week’s Summer Berry Extravaganza, and I am so excited to share my delicious creation for this week. I saw the Moon and Me’s Overnight Blueberry French Toast, and knew immediately I wanted to swap the berries and make my version of Overnight Strawberry Stuffed French Toast.
What I love about this baked French toast is the topping of macerated strawberries. You can adjust the sugar to your preference. DH has been on a strawberry shortcake making kick lately, and we use this same technique for topping his awesome biscuits. No one in our house ever says no to strawberries.
Personally, I tend to use less sugar if the strawberries are super sweet. I want the fresh fruit to be the star. Today’s strawberries were a little tart, so the little bit of sugar was perfect to keep the balance to sweet of the Coffee Mate Natural Bliss Vanilla Coffee Creamer. The combination of the cold berries is also a great contrast to the warm cream cheese throughout the dish.
You’re probably wondering why the coffee creamer, and to be honest, it’s all about convenience for me. I usually have the creamer in the fridge for my coffee and bundt cakes, but I never have plain half and half on hand. The creamer is essentially vanilla flavored half and half, so I am killing two birds with one stone. I just substitute where I need to. Easy peasy. One less thing to clutter up my already jam-packed side by side fridge.

- French Toast
- 8 slices of potato bread
- 1 - 8 oz. pkg Strawberry cream cheese, room temp
- 1 cup fresh diced strawberries
- 4 eggs
- 1 cup Coffee Mate Natural Bliss Vanilla Coffee Creamer
- Topping
- 2 Cups fresh diced strawberries
- ½ cup white sugar
- Optional whipped cream
- Prepare an 8X8 baking dish, I used butter to coat evenly
- In a medium bowl, mix softened cream cheese and diced strawberries
- Spread 1 slices of potato bread with cream cheese mixture and top with second slice to make a sandwich
- Repeat to make four sandwiches
- Using a bread knife, slice each sandwich into cubes, and place in buttered baking dish
- It is totally ok if a little cream cheese mixture squishes out as you cube the sandwiches. It’s all going into the same baking dish to get all melty anyway.
- In another bowl mix the beaten eggs and creamer
- Pour mixture over the cubed sandwich pieces, making sure all pieces are fully submerged in liquid
- Cover with plastic wrap tightly and refrigerate overnight
- In separate bowl or container with lid, add 2 cups of diced strawberries and ½ cup of sugar, stir to coat strawberries with sugar.
- Cover and place sugared berries in fridge to macerate, stirring occasionally to blend.
- Berries will be ready in an hour or two if you want to hold off and do this step in the morning while the French toast is baking.
- When ready to bake the French toast, remove baking dish from the fridge, and bring to room temperature.
- Preheat oven to 375°F
- Remove plastic wrap and bake French toast in oven for 45 minutes or until firm in the center to touch and golden brown.
- Remove from oven, let set for 5 minutes
- Slice French toast, top with macerated strawberries, whipped cream, and serve warm.

We always do overnight casseroles for Holidays and I want to make this one for Fathers Day / my Bday weekend! I can see this becoming a staple !
I have seen so many recipes for french toast like this but just haven’t taken that step to make them myself. But since you stuffed these with my favourite berry now I am thinking I need to finally try it and start off with this recipe.

Haha yep, I totally substitute coffee creamer in recipes too! It’s always on hand, it never expires, and yes, it adds a bit of vanilla flavor 🙂 Oh yeah, and I feel your pain with the side-by-side fridge. They just don’t hold as much as you want them to, right? Mine is jam-packed all the time, and it’s just my husband and I!
