Easter is right around the corner, and every year I face the same dilemma. What do I put in the Easter baskets? As much as I enjoy biting the ears off a giant chocolate rabbit, I hesitate to just fill the baskets mindlessly with assorted candy. This year Easter Sunday falls on the first day of our spring break. Since we will be at the beach, I decided to create a fun assortment of outdoor activity items and some yummy snack items that will easily transfer to my beach bag. Plus as an added bonus, I can use some of the Snack Pack pudding cups to create these super easy Coconut Cream Pudding Cups for dessert.
Aside from attacking chocolate bunnies, a second Easter favorite treat is the classic coconut cream filled egg. I would break open the chocolate shell and eat all the inside first. I decided to recreate the flavor by adding in a quarter teaspoon of coconut extract and 2 Tablespoons of shredded coconut into an individual Snack Pack Pudding Cup and stirring carefully. I mixed some more shredded coconut with a few drops of green food coloring, and topped my blended coconut cream pudding cup with the festive green grass.
I placed a few mini Nilla Wafers, edible wafer bunnies, and sprinkles on top of the grass to resemble an Easter basket and voila! A super fast dessert to enjoy after Easter dinner! If you’re like me and enjoy a good crunch to complement the creaminess of the pudding, feel free to stir in a few extra mini Nilla Wafers before topping with the grass.
I love using flavor extracts. I always seem to find myself in the baking aisle when shopping at my local Walmart to see what exciting flavor combination I can create for my next recipe. Snack Pack Pudding Cups have new Easy Open Lids and they were a nice complementing snack to my outdoor activity themed Easter basket. It gives the kids a sweet treat while also providing the same amount of calcium as an 8 oz glass of milk.
We’ll be on the go a lot during spring break, so it’s nice that Snack Pack Pudding Cups don’t need to be refrigerated. I can easily transfer them from the Easter basket to the beach bag, and we are out the door. I think the kids will really enjoy their treats along with their new jump ropes, bubbles, and activity tablets. It will be good for us all to power down for some good old fashioned fun.
