It’s the weekend. Time to kick off your shoes and relax with a perfectly chilled beverage. The heat index has been over the top this week and I have just the concoction to cool you off and help you forget the week. If you close your eyes this Pineapple Coconut Sparkling Ice Refresher may even transport you to the beach.
A gorgeous sunny day is nice for sipping on a tropical drink, but when the temperature starts to rise, nothing quenches a summer thirst quite like water. Vintage Sparkling Water is a fun alternative than plain water and contains only 2 ingredients, carbonated water and natural fruit flavor.
Sometimes a few simple ingredients make the tastiest recipes. Vintage Sparkling Water doesn’t contain any high fructose corn syrup, sugar or sugar substitutes. I wanted this drink to pop with tropical fruit flavors. I cut a fresh pineapple into small chunks, placed them into a small bowl, and mashed the pieces to juicy pulp.
Next I placed the mashed pineapple into each section of an ice cube tray, and then topped off each section with the coconut sparkling water. The hardest part is waiting the several hours until the cubes are frozen solid.
I wondered what the difference was between sparkling water and seltzer water. Did you know it’s all about the bubbles? Sparkling water has fewer, softer bubbles than seltzer, and the bubbles are what makes these cubes so different.
After the cubes are frozen, remove them from the tray. I love how the carbonation and mashed bits of pineapple created a completely different textured ice cube. The tiny air bubbles get trapped as the liquid freezes. Next time, I’ll grab the kids and have them help make some fruity, sparkling ice pops.
To serve, place a few cubes in a glass and pour the bubbly coconut Vintage Sparkling Water over them. As the cubes slowly melt, small bits of pineapple separate and mingle with the natural coconut flavor of the sparkling water. Delightfully refreshing enjoy while you’re hanging at the pool we’re chilling on your deck after work on a Friday evening.
You can find Vintage Sparkling Water at your local Kroger, and is available in 6 delicious flavors including Pink Grapefruit, Lime, Coconut, Lemon, Cucumber Melon and Original.
