Sweet and Sassy Pineapple Stuffing #SundaySupper #HelpingHands
By now everyone has heard of the horrendous devastation left in the wake of Hurricane Sandy. Thankfully, no one in our #SundaySupper crew has suffered significant damage due to the storm, but there are way too many that did.
This week, as many of us gave thanks, and celebrated Thanksgiving, we decided to not only cook from the heart for our own families, but also raise awareness for others in need from the Sandy disaster. For our Turkey day meal, I found myself making a number of dishes my full family has shared in the past, and one of my favorites is Sweet and Sassy Pineapple Stuffing.
This dish pairs wonderfully with poultry or ham. It is always on the table in our house for holiday get togethers, and on occasion, the weekend dinner menu for a change of pace. Being totally honest, this has got to be one of the easiest stuffings to make. There are no complicated flavor profiles to blend, plus the kids will like it since it’s sweet, and not the usual savory stuffing with gross things in it like celery (according to my daughter). I totally cheated this time and used pre-cubed potato bread, instead of the white bread it calls for. I also have substituted King’s Hawaiian bread and reduced the sugar. There are many ways to alter this recipe and make it your own.
Ingredients:
4 Cups fresh bread cubes
1 can crushed pineapple with juice
1 Cup milk
1 Cup melted butter
1 1/2 Cups of sugar
3 beaten eggs
Directions:
1. Preheat oven to 325 degrees F
2. In large mixing bowl combine eggs, milk, sugar, melted butter, and crushed pineapple. Combine thoroughly.
3. Add bread cubes and mix to coat well.
4. Pour mixture into 9″x13″ greased baking dish
5. Bake for 1 hour
6. Remove from oven and let stand 5-10 min before serving to set.

I never in a million years would’ve said hey let’s put pineapple in the stuffing. I think this would make a great alternative to Easter dinner than the usual pineapple slices we do.

This is quite different than other stuffings I have made. I will put this in my list of dishes to make. I know that pineapple goes well with ham.

this has got to be the best stuffing recipe and the most exoticly different kind I have ever ran across wow pineapple hum? wonder how that would taste have to try it one day!
