Oh, how I missed my #SundaySupper crew!  April showers bring May flowers!  Not only is Spring in the air, but this week’s theme is featuring tons of recipes for all types of showers!  Get it…April Showers!  So cute!  We have some pretty clever cooks in the crew.

But don’t worry, you don’t have to be throwing  an actual shower to check out all the tasty recipes we are sharing this week.  There’s a wide array of sweet treats, appetizers, drinks, and main dishes all great for sharing around your own family table.  Personally, I would love to start every meal with dessert.  Life’s short ya know, take time to smell the roses and enjoy a Raspberry Lemonade Thumprint Cookie.

Raspberry Lemonade Thumbprint Cookies

Right off the bat, I need to confess.  I used a box mix to start these cookies.  Last year I tried Pillsbury’s Pink Lemonade cookies and totally loved them for a sunshine filled treat.  When I saw them back in my local Target this year for the season I snagged another box.  Ok, six.  Don’t judge me.

My kids and I love raspberry lemonade, so why not use the mix and make a raspberry version!  Sweet!  These cookies have a lovely lemon tang to them with just the perfect hint of raspberry from the extract baked into the cookie.  The all fruit spread gives another layer of raspberry goodness to the cookie as well.  These pretty cookies are perfect for Spring or your next special party or shower.

Tangy lemon and raspberry cookies perfect for any occasion.

Ingredients
  • 1 box Pillsbury Pink Lemonade cookie mix
  • 1 egg
  • ½ Cup of butter
  • 1 Tablespoon of Raspberry extract
  • ⅓ Cup Raspberry Polaner All Fruit Spread
  • Optional sprinkles for decorating
Instructions
  1. Preheat oven to 375 degrees F
  2. Combine cookie mix, softened butter, raspberry extract, and egg in large bowl. Mix until soft dough is formed.
  3. Using a small scoop, drop rounds of cookie dough on prepared baking sheet
  4. Press down with your thumb to make a small well in the center of the cookie. Be careful not to press to deep. Fill well with ½ teaspoon of fruit spread
  5. Bake for 12-15 minutes or until slightly firm and edges start to brown
  6. Allow to cool for a few minutes on the cookie sheet.
  7. Move cookies to a wire rack to finish cooling
