Pumpkin Chocolate Chip Oatmeal Cookies Fall Inspired #SundaySupper

Ahhhh…the cool crisp air, crunchy leaves on the ground, a faint smell of a fire burning in a neighbor’s house, and football.  These are just a few of my favorite things about Fall.  This week the Sunday Supper crew is sharing our favorite Fall inspired recipes.  In true Fall spirit, we went to our first Georgia Tech football game.  Unfortunately, we ended up weathering torrential downpours while there.  We left at halftime, and by the time we walked from the stadium to the train station, we were all soaked through to the bone.  When we finally arrived home and everyone was in dry clothes, I thought what better way to take the chill off, then to make a batch of these Fall inspired Pumpkin Chocolate Chip Oatmeal Cookies.

I had a tough time picking a recipe for this week’s theme.  I have so many gorgeous recipes on my Pumpkin Deliciousness Pinterest Board.  Must eat all the pumpkin things!  I haven’t actually made anything using pumpkin yet this year, so this was pretty exciting.  I decided to adapt a recipe for Pumpkin Pie Oatmeal Walnut Raisin Cookies from Mom On Time Out.  I loved the idea of oatmeal with the pumpkin, but not a fan of walnuts or raisins.  I went with chocolate.  Mini semi-sweet chocolate chips to be exact.  I figured Ruby would like chocolate chips for her first batch of cookies.  Yes, I named my new mixer, Ruby.  Doesn’t everyone name their stand mixer?  I know The Flour Artisan does.

I think I need to tweak this recipe a bit more.  The cookies were flat and super chewy.  So chewy, in fact, I had a hard time getting them off the baking sheet when they were warm.  I tend to move cookies off the baking sheet pretty fast so they don’t over-bake, but these were super soft and the bottoms would smoosh from the spatula.  I tried to wait for them to cool, but I tend to be a little impatient which is not good in baking.  You could taste the pumpkin and spices but they weren’t overpowering.  I think pumpkin blends well with chocolate chips in cookies.  My personal taste tester, Baby, agrees in full and gave two thumbs up on the recipe.

Overall, the cookies are quite tasty, and I will definitely be making them again with a few edits for my personal preference.  While searching for additional cookie recipes, I also found some great info from Kelly at Just a Taste.  Apparently the longer the dough refrigerates, the better it binds.  If the cookie dough binds well, then the cookies won’t spread too much as they bake.  Again…sometimes I can be impatient.  Guess I should have left the batter to chill longer.  Another baking lesson learned.  My pumpkin chocolate chip oatmeal cookies  are only the tip of the iceberg for all things Fall this week.  Head on over to the rest of the Sunday Supper team and check out their Fall inspired recipes too.  I’m sure you will be pinning and bookmarking all afternoon!

Pumpkin Chocolate Chip Oatmeal Cookies

Ingredients
  • 2 Cups all-purpose flour
  • 1½ cups old-fashioned oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 cup pure pumpkin (not pie filling)
  • 1 egg, room temperature
  • 2 tsp vanilla extract
  • 1 Cup semi sweet chocolate mini chips
Instructions
  1. In a large bowl combine dry ingredients - flour, oats, baking soda and spices, set aside
  2. In second large bowl, cream together butter and both sugars
  3. Add egg and mix until thoroughly
  4. Add pumpkin and vanilla extract and continue mixing
  5. Slowly mix in oats, flour and spices and continue mixing until combined
  6. Stir in mini chocolate chips
  7. Chill dough for at least 2 hours
  8. Preheat oven to 350°F
  9. Drop heaping tablespoon-size balls of cookie dough about 2 inches apart on prepared baking sheets
  10. Bake for 15-17 minutes or until cookie is no longer soft in the middle
  11. Remove from oven, and let cool on baking sheet 3-4 minutes
  12. Transfer to a wire rack, and let cool completely
