Peppermint Sugar Cookies #SundaySupper Cookie Exchange

I am on cookie overload this week for sure! Not only did I have my office cookie exchange, Baby and I also headed over to a friend’s house for a cookie decorating session with her Brownie and Daisy Girl Scout troop. We have cookies coming out of our ears, but it does not lessen my excitement in the least for my FAB #SundaySupper cookie exchange today.

Similar to the office exchange cookie choice, I went simple, but kept the flavor profile holiday inspired with my Peppermint Sugar Cookies.

These cookies were supposed to stay thick and have a cracked top.  I was hoping it would look pretty when the sugared area cracked open.  As you can see, they didn’t visually come out as planned.  No cracking at all.  The original sugar cookie recipe HERE from AllRecipes.com had so much butter, the cookies tasted like delicious butter mints.  The flavor of the cookies was a success, plus they had a great soft, chewy texture, but I they were just flatter than I wanted.

Peppermint Sugar Cookies

Ingredients
  • 1¼ cups white sugar
  • 1 cup butter
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cream of tartar
  • 3 teaspoons of Peppermint extract
  • Peppermint sugar for decorating
Instructions
  1. Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.
  2. Cream together sugar and butter. Beat in egg yolks and vanilla.
  3. Add flour, baking soda, and cream of tartar. Stir.
  4. Form dough into walnut size balls, and place 2 inches apart on cookie sheet. Don't flatten.
  5. Bake 10 to 11 minutes, until tops are cracked and just turning color.
