Peppermint Puppy Chow Snack Mix

I love the holidays because I get to bask in the glory of all baking all things peppermint.  I am what you call a peppermint and mint fanatic so it’s on my friends!  I’ve even replaced my Fall hashtag of #EatAllThePumpkin with my new #EatAllThePeppermint!  This homemade snack mix is everywhere on pinterest and each season brings a variety of fun new flavors.  This is my first attempt making muddy buddies, and my Peppermint Puppy Chow Snack Mix turned out amazing!

With the holidays coming up so fast, I thought this peppermint puppy chow snack mix would make a super cute gift for teachers when stored in a jelly jar and tied with ribbon.  I wanted to make the recipe to make sure it tasted good.  Well it did taste good.  I loved this mix so much, I found myself mindlessly munching away on the container while working.  The cool, minty and crunchy squares kept calling my name!

Thankfully the container is now empty, but my brain is definitely telling me to make more.  This super simple snack is a thrifty gift too.  You can make a big batch and start filling your jelly jars.  Once you add some pretty ribbon and a homemade tag your gifts are ready to give.  I can’t wait to experiment with some more seasonal flavors and make the next batch.

Ingredients
  • 10 cups rice Chex cereal
  • 2 cups powdered sugar
  • 1 12 oz package white baking chips
  • 1 tsp peppermint extract
  • 1 cup of your favorite peppermint candy (I used Andes Peppermint Crunch Baking Chips)
Instructions
  1. In a large/microwave safe bowl, combine white baking chips and peppermint extract.
  2. Microwave on high 45-60 seconds (depending on the strength of your microwave)
  3. Remove from microwave and carefully stir the chips.
  4. Microwave for an additional 30 seconds and stir the chips again until completely melted and smooth.
  5. Add cereal and toss to evenly coat.
  6. Fold in peppermint candy pieces and mix with coated cereal.
  7. Place powdered sugar in a large sealable plastic bag.
  8. Pour cereal mixture into plastic bag and shake to coat fully in powdered sugar.
  9. Remove coated cereal from bag and serve, or store in an airtight container for up to a week. If you honestly think it will last that long.
