Need More Iron? Try Making This Super Easy Spinach Pie

Our body needs iron to build healthy muscles and maintain healthy blood.

It can be a challenge to get as much iron you need in a day. I tend to throw a few baby spinach leaves in salads, but very rarely eat a full serving, unless of course you count spinach dip.

I have been making this simple baked spinach dish for years. It freezes well and is a fantastic grab and go breakfast, lunch, side dish or snack.

Ingredients:
1 box frozen spinach (thawed and drained)
1/2 C shredded mozzarella cheese
1 C part skim ricotta cheese
3 eggs
3 cloves garlic (chopped fine)
1/2 tsp salt

Directions:
1. Preheat oven to 350 F

2. Mix ingredients thoroughly in bowl

3. Fill glass baking dish with mixture. I used a 9X4, but an eight or nine inch pie dish works well too.

4. Bake for 45 minutes until cooked through and knife comes out clean.

This is possibly one of the easiest dishes in my stash of go to recipes. I prefer to use the rectangular baking dish so I can cut the spinach pie into small squares for ease of portability. The consistency is similar to quiche, but heavy on the spinach. The garlic gives the dish a good flavor, but you may want to make sure you have some mints handy for after eating. Just in case. 🙂
