Summer! The perfect time of year to plan an afternoon in the park with the family, and bring a little lunch. It never fails though, everyone always wants a little sweet treat after the meal. One of my favorite desserts that remind me of sunshine and lazy afternoons is this delicious Lemon Yogurt Bundt Cake.

Lemon Yogurt Bundt Cake!
This light and refreshing cake will be a hit at your next get together. The tangy lemon flavor just screams Summertime picnic. It’s also easy to pop into your picnic basket since it doesn’t have a messy icing that needs to be refrigerated.
- For the Cake
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1½ cups granulated sugar
- zest of 2 medium lemons
- 2 teaspoons lemon extract
- 1 cup (2 sticks) unsalted butter, softened
- 3 large eggs room temperature
- 1 (8 ounce) container Lemon Blended Greek Yogurt
- For the Glaze
- 2 Tablespoons of butter
- ½ to ¾ Cup powdered sugar
- 1-2 Tablespoons of fresh Lemon Juice
- For the Cake
- Preheat oven to 350° F.
- Spray 10” bundt pan with Baking Pam and coat with plain fine bread crumbs
- In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
- In a large bowl, add the butter and mix until light and fluffy (about 2 minutes)
- Add sugar to butter and mix an additional 1-2 minutes until completely blended.
- Add lemon zest into butter mixture
- Add and beat in the eggs one at a time
- Alternately mix in the flour mixture and yogurt, mixing until combined
- Add in lemon extract
- Pour the batter into a prepared pan.
- Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow to cool 10 minutes in the pan, then turn out onto a wire rack and cool completely.
- Once the cake is cool, prepare the glaze.
- To make the glaze
- Melt 1 Tablespoon of butter in microwave safe dish
- Stir in powdered sugar until texture is almost crumbly in texture
- Add lemon juice a little at a time to butter/sugar mixture.
- Stir to desired consistency for drizzling.
- Mixture should be smooth and opaque.
- Drizzle over cake and serve

Mmmmmm yummy! I have been on a lemon kick lately so this fits right in nicely and needs to make an appearance in my kitchen soon!
Your recipe did not specify when to add the sugar. Also, I noticed this recipe did not call for baking powder. Does it not need the baking powder? I’ve tried your recipe exactly and for some reason the cake falls flat once it cools and I use a bundt pan and the bottom of the cake that is now the top once out of the pan is unbaked.
Hi Shay, thanks for catching the miss on the sugar. It should be added when creaming the butter. I updated the recipe. This recipe calls for baking soda, not powder. How flat does the cake fall? It should be dense and moist when cooled so it will not be a fluffy cake. Ovens may vary, so I suggest continuing to bake the cake a little longer than the original time I use. The cake should spring back when lightly pressed when done (while in the pan), and an inserted toothpick or butter knife blade should come out clean. Bundt cakes definitely bake longer than a regular cake due to their dense texture and heavier ingredients. Hope this helps. Feel free to email me directly if you need more help. 🙂
