Easy Crock Pot Beef Tips & Meal Planning With @eMeals

I know I am one of the luckiest women alive to have a husband that will take the initiative to make dinner for the family.  The one challenge we face each week is what to make.  Menu planning is not one of either of our strengths.  That’s where joining eMeals comes to the rescue!  eMeals has a plan to fit your family, your budget and your lifestyle.  The first menu I reviewed listed a crock pot recipe that looked easy enough for a lazy Satruday afternoon so I gave it a whirl.  The results….Amazing Crock pot Beef Tips!

In our house, DH pretty much decides what he is going to make for dinner that morning and will pull something from the freezer to thaw.  On days he forgets, it’s usually pasta to the rescue.  My husband loves pasta.  He boils the pasta and grabs a jar of sauce from the pantry and dinner is done.  For me, not so much.  It’s so boring!  And where are the veggies?  Hello….we are raising kids here, not living single in a post college apartment.    This why I am most happy about joining the eMeals program.

Sounds awesome doesn’t it!  eMeals simplifies the whole meal planning process to make it easier to choose delicious, healthy choices for dinner every night.  They have 10 different meal plans to choose too.  You just pick the one that is right for you.  There are sample menus listed to give you an idea of what the weekly menu will be like.   I found the Beef Tips recipe in the Classic Meals, and the side dishes were even provided.  Seriously.  This dinner could not have been easier to prepare.  Speaking of preparing, I almost forgot to share the recipe!

Ingredients:
(Cooking spray)
4 lb sirloin tip roast, trim fat & cut into cubes
2 packets brown gravy mix
(1 c water)

Directions:
1. Spray crock pot with cooking spray.
2. Spread beef tips on bottom.
3. Combine dry gravy mix with water, and stir well to blend.
4. Stir into beef tips.
5. Cook on high for 3 to 4 hours.
6. Save 1 1/2 lbs for second night’s dinner.

This dish is great because the recipe is planned for making two meals in one. The first dish is the beef tips, and the second you would use the leftovers for a second meal of beef and cheese wraps. Brilliant! Of course if you only wanted to make the beef tips for a single meal and not save yourself a boatload of time for dinner later in the week, you could certainly use less meat and one package of gravy mix. Either way, this dish is perfect for a chilly winter day and will warm you from the inside out.
