Crispy Oven Fried Buffalo Chicken Tenders for a Spicy #SundaySupper

Happy Sunday, y’all!  It’s that time again in the week, where we all gather ’round the family table, and share a bite to eat.  Whether it’s drinks & appetizers, desserts & coffee, or a full belly meal, it’s always better shared around the table with loved ones.  This week the #SundaySupper crew is bringing the heat!  That’s right!  We are fanning the flames, and sharing our favorite spiced up recipes.  A favorite spicy flavor in our house is buffalo sauce, so I’m starting the lineup this week with Crispy, Oven Fried Buffalo Chicken Tenders.

If you are looking for the full flavor of buffalo wings, without all the fat and calories, then this recipe is for you.  I went super easy, and used my favorite prepared buffalo wing sauce, but you can always use your own favorite, or straight up hot sauce if you want.  I also believe you need the tang of blue cheese with buffalo wings, but before you go all, but I don’t like blue cheese on me, you can always substitute Ranch dressing, if that’s your thing.  Just keep it to yourself, mmm’k?  #TeamBlueCheese does not need to hear about it.

I grabbed the helpful hands of DH tonight to help in the kitchen for this recipe.  Nothing tougher than trying to dip and coat chicken, AND take pictures.  I had DH go to town with the Panko bread crumbs for extra crunch.  YUM!  What is also great about this recipe, is that I could intensify the heat for DH if I wanted to, while keeping it on the DL for myself.  Tonight I just went with one level of heat, medium, to keep us both happy.

Pop the chicken tenders in the oven, and soon the heavenly buffalo wing aromas will fill your kitchen…without all that nasty smelling grease if you would have if you were frying them.  See…perfectly baked, and more importantly, crunchy!  Nobody likes soggy chicken tenders.

Crispy Oven Fried Buffalo Chicken Tenders for a Spicy #SundaySupper

Ingredients
  • 3-4 Boneless, skinless chicken breasts, cut into lengthwise strips
  • ½ C blue cheese dressing
  • ½ C buffalo wing sauce
  • 1½ C Panko bread crumbs
  • ½ C all purpose flour
  • Optional celery and blue cheese crumbles for serving
Instructions
  1. Preheat oven to 400 degrees F
  2. In shallow bowl add flour
  3. In second shallow bowl, mix blue cheese dressing and buffalo wing sauce until thoroughly combined
  4. In third shallow bowl add bread crumbs
  5. Dredge chicken strip in flour, coat evenly, shake off excess flour
  6. Dip flour dredged strip into sauce mixture and coat evenly
  7. Dip sauced strip into Panko bread crumbs, coat evenly, and place on wire rack/baking sheet.
  8. Repeat for remaining chicken strips, then discard all remaining ingredients in dipping bowls.
  9. Bake chicken strips in oven for 20-25 minutes, or until chicken strips are cooked through.
  10. Remove from oven and serve warm with celery, additional dressing, and blue cheese crumbles for dipping.
