Just in time to get your brain turning for holiday baking, I am jumping into the fabulous #CookieWeek!  Susan of The Girl In The Little Red Kitchen and Kim of Cravings of a Lunatic have joined together with 23 of their blog friends to present a week of cookie treats!  We have every type of cookie you can imagine listed this week, including something for our furry friends!  Today I am sharing my deliciously sassy Classic Gingersnap Cookies.

Classic Gingersnap cookies always remind me of the holidays and spending time with family.  I baked a batch of these yummy cookies the evening my parents were arriving for a visit from Florida.  Gingersnaps are one of my Dad’s favorite cookies, and the aroma while baking filled the house with a spicy sweet warmth for their arrival.

Ingredients
  • ¾ cup unsalted butter, softened
  • 1 cup white sugar
  • 1 egg
  • ¼ cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon ground ginger
  • ¼ cup raw sugar for topping cookies
Instructions
  1. Preheat oven to 350 degrees F.
  2. Lightly coat baking sheet with cooking spray.
  3. In a large bowl, cream the butter and white sugar.
  4. Add the egg and beat until light and fluffy, then add in the molasses.
  5. In a separate bowl, mix together the flour, baking soda, salt, ginger and cinnamon.
  6. Add flour mixture to the egg mixture and stir until well blended.
  7. Using a ½ inch cookie scoop, scoop and place cookie dough on baking sheet about 2 inches apart.
  8. Dip the top of each scoop of cookie dough into raw sugar crystals and place back on baking sheet with the sugar side facing up
  9. Bake for 10 to 12 minutes.
  10. Remove from oven, move cookies from baking sheet to wire rack, and let cool.
