Cinnamon Chip Snickerdoodles #CookieWeek

Happy Thursday everyone!  The amazing #CookieWeek is in full swing!  Huge thanks to Susan of The Girl In The Little Red Kitchen and Kim of Cravings of a Lunatic for organizing such and incredible week of cookie treats!  My friend Jen, over at Me, Myself and Jen called my Macadamia and White Chocolate Chip Cookies her kryptonite.  That statement made me laugh out loud because today I am sharing my own personal Krytonite, these sweet and sassy Cinnamon Chip Snickerdoodles.

Snickerdoodles are my all time favorite cookie to make around the holiday.  I love the combination of the slightly crispy outside and the chewy inside.  Snickerdoodles have great texture including the cinnamon sugar mixture they are typically rolled in to give them a little extra crunch.  For today’s cookie, I decided to pass on the cinnamon sugar and experiment with cinnamon chips baked into the cookie.

Holy YUM people!  I took these bad boys to the office, and at first glance everyone thought they were chocolate chip cookies.  They were perfectly golden brown and the chips were obviously visible, but you would never know it was a Snickerdoodle until you took the first bite.  With that first taste, cinnamon and sugar enveloped your tastebuds  and the all familiar Snickerdoodle came crashing into your brain with some extra pizzazz from the the cinnamon chips.  I didn’t miss the cinnamon sugar on the outside of these cookies at all, and I was glad I tried the cinnamon chips.  They were a complete success!

Cinnamon Chip Snickerdoodles

Ingredients
  • 1 cup butter
  • 1½ cups white sugar
  • 2 eggs
  • 2¾ cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • ½ teaspoon salt
  • 1 10 oz Bag of cinnamon baking chips
Instructions
  1. Preheat oven to 350 degrees F
  2. In a large bowl, cream the butter and sugar.
  3. Add the eggs (one at a time). Beat until light and fluffy.
  4. In a large bowl combine the flour, baking soda, cream of tartar, and salt
  5. Add flour mixture to the egg mixture and stir until well blended.
  6. Fold in cinnamon bakingt chips.
  7. Using a ½ inch cookie scoop, scoop and place cookie dough on baking sheet about 2 inches apart on ungreased baking sheet.
  8. Bake for 8-10 minutes or until edges are golden brown.
