Chocolate Dipped Rice Krispie Treat Pops #SundaySupper #PicnicRecipes

It’s Memorial Day weekend!  That means a three day weekend is upon us, and I have an extra day to spend with the family.  The weather is cooperating, and holiday picnics are in the air.  I am excited to be back participating in this week’s #SundaySupper, and we are all thrilled to be sharing our favorite picnic recipes.

A few weeks ago I made a variety of treats to sell in a blogger bake sale for No Kid Hungry.  Not only was it a fun and extremely rewarding event, it rekindled my childhood love for Rice Krispie Treats.  For this week’s picnic theme I decided to make another batch of these awesome Chocolate Dipped Rice Krispie Treat Pops.

I don’t know anyone who doesn’t like Rice Krispie treats.  I make the treats in a big stock pot on the stove.  I know you can make them in the microwave too, but I’ve never tried it.  Stove top is easy enough for me, plus I like using the bog pot so I don’t have Rice Krispies flying all over as I stir.

I used a pretty flower shaped cookie cutter for my treats, but I don’t think the pictures I took do the shape justice.  They are much cuter in person.  I was going to fully dip the treats like I did for the bake sale, but my kids don’t need that much chocolate on an already sweet treat.  Drizzling the treats with melted chocolate allows just the right amount of awesome, plus it’s perfect for making the sprinkles stick.  Once the chocolate is set, you can slide the pops into a baggie and tie with a ribbon.  Perfectly portable treats for your next picnic.

I like to add different cereals in when I make these treats.  Cheerios are great because they come in so many different flavors now, and aren’t too sweet.  You can totally stick to all Rice Krispies, and make the original Rice Krispie Treat recipe.  And just in case you are heading to a picnic and weren’t asked to bring a dessert, we have plenty of other ideas and recipes for you to peruse.  Just head on over to any of the FAB food blogs listed below.  You won’t be disappointed!

Chocolate Dipped Rice Krispie Treat Pops #SundaySupper Picnic

Ingredients
  • 3 tablespoons butter or margarine
  • 1 package 16 oz mini marshmallows
  • 6 cups Kellogg's® Rice Krispies® cereal
  • 2 cups Peanut Butter Cheerios
  • Cake pop sticks
  • Chocolate for dipping/drizzling (I use Baker's easy microwaveable cups)
  • Multi-colored shaped sprinkles or nonpareils (optional)
Instructions
  1. In large saucepan melt butter over low heat.
  2. Add marshmallows and stir until completely melted.
  3. Remove from heat.
  4. Add Rice Krispies and Cheerios, stir until well coated.
  5. Line 13X9 baking dish with wax paper.
  6. Evenly press mixture into 13 x 9 x 2-inch.
  7. This may sound funny, but I butter my fingers for easy pressing and molding.
  8. Allow to marshmallow treats to cool.
  9. Use your favorite cookie cutter to cut into shapes.
  10. Push a cake pop stick into the bottom of shaped treat.
  11. Lay treats on sheet of wax paper
  12. Melt chocolate according to package directions
  13. Drizzle melted chocolate over shaped treats
  14. Decorate with sprinkles or nonpareils as desired
  15. Let chocolate set until hardened again
  16. Best if served the same day
