I love making dinner when my oven does all the work for me. The fillets are so easy, I can use the extra time to make my family’s favorite, vegetable side dishes. Fish is an important part of a well balanced diet. With Gorton’s Gourmet Fillets, I have found one of the easiest (and tastiest), ways to add more seafood into my family’s diet. Fish tacos! And of course said fish tacos are not complete without a flavorful, crunchy slaw on top to pack an extra flavor punch. Diced cucumbers, sliced grape tomatoes, and crunchy cabbage are perfectly paired with the sweet and tangy Balsamic salad dressing. The cold slaw is a nice complement to the warm and crunchy Pub-Style Beer Batter Cod.

Can you see the crispy bits on the chopped fillet pictured below? My daughter devoured half the chopped pieces off the cutting board before I even had the first taco assembled. It’s no wonder the USDA, American Heart Association, American Cancer Society, and American Diabetes Association all recommend eating seafood at least twice a week. If my daughter makes fish disappear that fast during dinner, it has to be good, and you can bet I will be serving it again soon.

Balsamic Beer Batter Fish Tacos

Ingredients
  • 2 Gorton’s Pub-Style Beer Batter Cod Gourmet Fillets
  • 1 Cup pre-shredded coleslaw mix
  • ½ Cup your favorite sweet and tangy balsamic salad dressing
  • ½ Cup diced cucumbers
  • ½ Cup sliced grape tomatoes
  • ½ Cup of your favorite Balsamic Salad Dressing
  • 4 Flour tortillas (small taco/fajita size)
  • Optional Balsamic glaze for topping
Instructions
  1. Preheat oven to oven to 425 degrees F.
  2. Bake Gorton’s Pub-Style Beer Batter Cod Gourmet Fillets according to package directions.
  3. In a medium sized bowl add coleslaw mix, diced cucumbers, diced tomatoes and balsamic dressing. Stir to combine.
  4. Set slaw aside to marinate.
  5. When fish fillets are done baking, remove from oven and carefully chop into bite size pieces for tacos.
  6. Fill flour tortilla with chopped cod, layer slaw on top of the fish, and drizzle with balsamic glaze if desired.
  7. Serve and enjoy immediately.
