I don’t get to watch much TV, but when I do, I’m usually trying to convince my kids to watch cooking shows. One of my favorite shows to watch is Chopped. I enjoy when the contestants open their baskets, review their mystery ingredients, and try to determine a unique way to incorporate them into a finished dish. Imagine how excited I was when I was asked to participate in a “Chopped at Home” style challenge in my own kitchen. It takes some skill to be able to use a basket of random ingredients to present a cohesive recipe to the judges, but I think they would like my scrumptious 6 Cheese Italian Stuffed Chicken Breast.

On the show, Chopped contestants have one chance to get their dish right and have a full pantry and refrigerator at their disposal. For my home challenge I was required to use Sargento® Chef Blends Shredded 6 Cheese Italian, boneless skinless chicken breast, red bell pepper and Greek yogurt. Luckily I too, could use a few additional ingredients from my pantry.

My final dish was a complete success. I did have an ace up my sleeve though. My husband is a lover of Italian food, so it was almost a guarantee he would like it. This recipe is perfect when you want enjoy all the robust flavors of a home cooked Italian meal, but don’t have hours to prepare dinner. I don’t know if this dish would have won any accolades with the judges on Chopped, but it sure did win the approval of my family.

Ingredients
  • 4 chicken breasts
  • 1 can of diced tomatoes with basil, garlic and oregano (do not drain).
  • ½ Cup Greek yogurt
  • 3 Cups instant stuffing mix
  • ½ Cup diced red bell pepper
  • 1 Cup Sargento® Chef Blends™ Shredded 6 Cheese Italian, plus additional for topping.
Instructions
  1. Preheat oven to 375
  2. Prepare 5x9 baking dish with a light coat of olive oil.
  3. Pound each chicken breast to about ½-3/4 inch thick.
  4. In a large bowl add Greek yogurt and the can of tomatoes and mix thoroughly.
  5. Add stuffing mix to tomato mixture and combine until well blended.
  6. Take about ⅓ of the stuffing mixture and layer into the bottom of the prepared baking dish.
  7. Add the shredded cheese into remaining stuffing and combine.
  8. Divide remaining stuffing into 4 portions.
  9. Take the first portion of stuffing, place it in the center of the flattened chicken breast, fold together like a taco shell, and place in the baking dish.
  10. Repeat with remaining chicken beasts and portions of stuffing.
  11. Bake stuffed chicken breasts in oven for 40-45 minutes (or until cooked thoroughly).
  12. Remove from oven and top with additional shredded cheese.
  13. Serve immediately with your favorite vegetable sides.
