We are a two parent, work outside the home, household. In my last office in Atlanta, I became quite spoiled having a full-service cafeteria in the building. Now, after moving back to the PA office, there’s a simple kitchen. I have access to a toaster oven, microwave and refrigerator, but that also means I need to pack a lunch every day. Packing lunch five days a week is hard, yo. Basic sandwiches get boring after the first 30 or so. I like a hot lunch, so leftovers are great. Unfortunately, there’s usually only enough leftovers for one parent to take the next day. Being the resourceful woman I am, I created a successful plan for making sure I had a tasty lunch every day. Each week, I make 5 Homemade Individual Refrigerator Meals in 30 Minutes.
How do I make 5 in 30 minutes? You start with the right components, of course. Prepping your kitchen is half the battle. First, I buy precooked turkey breast or rotisserie chicken from my local grocery or club store. Second, I always have frozen vegetables on hand in the freezer. Third, I keep a supply of whole wheat couscous and a variety of Rubbermaid BRILLIANCE storage containers in the pantry.
Once you have your supplies on hand, you can start making you lunches. I tend to set up all my Rubbermaid BRILLIANCE containers in a little assembly area. Bonus if you have a cute helper like me.
I start by microwaving the vegetables. For this post, I made garlic Parmesan green beans. I use the steam in bag vegetables, but if I didn’t, I could microwave my vegetables in Rubbermaid BRILLIANCE. For real! The containers are BPA-free and have innovative vents under the latches to make the containers splatter resistant. And the food storage containers are dishwasher safe! Say it with me – Halleluiah!
Once the green beans are done cooking, carefully transfer them to a bowl, and toss with a little olive oil, garlic powder and shredded Parmesan cheese. Done. Make these for your family and you will never have leftovers. Next, I prepare the couscous. The fastest side I know how to make. In a large, glass measuring cup, I microwave the couscous, water and a dash of kosher sea salt. After about 90 second in the microwave, I carefully remove the measuring cup and fluff the couscous with a fork. I stir in a little olive oil and garlic powder, then cover with a small plate for an additional 2 minutes to finish cooking.
While the green beans and couscous are slightly cooling, I tackle the rotisserie chicken. Separate all the meat from the bones, and chop into bite sized cubes. Once the meat is cubes and set aside, it’s time to assemble the meals.
Start with a layer of couscous to the bottom of the container. Next add the green beans and diced chicken. I typically let the assembled food to finish cooling before sealing and placing in the refrigerator or freezer. It helps reduce the condensation on the inside of the container. Once cooled, into the refrigerator they go for easy grab and go lunch.
