2 Ingredient Queso Recipe Helps Create Taco Turnovers In Snap

The big game is coming. I have a secret weapon to satisfy all those hungry football fans filling your kitchen and on the hunt for snacks. Ro*tel and Velveeta two ingredient queso dip! I not only serve the zesty, creamy queso with tortilla chips, but I also use it to make these tasty Taco Turnovers in a snap.

Making homemade queso is super easy when you combine the bold, zesty flavors of the classic Ro*tel diced tomatoes and green chilies with creamy Velveeta. Both ingredients are perfect for stocking in the pantry so they are always on hand when I need them for a quick snack or appetizer for guests.

Simply empty a can of Ro*tel tomatoes in a microwave safe bowl, add diced Velveeta, and heat the ingredients according to the directions on the can of Ro*tel tomatoes (or check out the printable recipe card at the bottom of this post). Voila! You have zesty, creamy queso ready to serve.

To take this queso to the next level and create a second appetizer to serve, I simply add browned ground beef. 

Once all three ingredients are thoroughly combined I set aside to prep the store bought puff pastry. I unfold the pastry, cut into even squares, and add a spoonful of the queso to the center of each square. Then fold opposite corners of the square over the filling to form a triangle, seal the edged with a fork, and brush with egg wash.


That is if you can keep your family from eating all the queso while you are trying to fill the turnovers. As you can see, warm and gooey q

  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 pkg (16 oz each) Velveeta®, cut into ½-inch cubes
Instructions
  1. Combine undrained tomatoes and Velveeta in medium saucepan.
  2. Cook over medium heat 5 minutes or until Velveeta is melted completely and mixture is blended, stirring frequently.
  3. Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.

Ingredients
  • 1 lb extra lean ground beef
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 pkg (16 oz each) Velveeta®, cut into ½-inch cubes
  • 1 pkg puff pastry (thawed)
  • 1 egg
Instructions
  1. Preheat oven to 375 degrees F
  2. Prepare large baking sheet with a layer of parchment paper
  3. Preheat large sauce pan over medium heat. Add ground beef and cook until no longer pink.
  4. Once meat is cooked, add the can of undrained Ro*Tel tomatoes and Velveeta cubes to saucepan.
  5. Stir until cheese is completely melted and all ingredients are thoroughly combined.
  6. Remove from heat, set aside and prepare puff pastry.
  7. Unfold puff pastry sheets on prepared parchment paper lined baking sheet.
  8. Cut each pastry sheet into 9 equal squares (about 2 inches ea).
  9. Place a Tablespoon of the beef queso mixture in the center of each square.
  10. Fold pastry square to form a triangle and seal edges with a fork.
  11. In a small bowl, beat one egg. Using a pastry brush, lightly coat each triangle with egg wash.
  12. Bake triangles in oven for 13-17 minutes until golden brown and pastry has puffed.
