We had some major happenings going on for Easter this year and I am finally getting around to posting them. You would think since Easter was so late, this post would have been written and scheduled to publish, but it has just been so crazy that didn’t happen. I decided to announce an award for each of the most popular events.
MOST FUN award goes to my in-laws! Yay!
DH’s father and wife were in town. Baby and Jed visited playgrounds, parks, McDonald’s for lunch and the Georgia Aquarium. Mommy and Daddy even got a date night out of the deal! It was wonderful!

Nothing like those Reese’s Butter eggs and bright yellow Peeps to make Easter morning complete.
MOST SHOCKING award goes to DH for spending half the afternoon in the kitchen with me. Actually it’s not so shocking given his new-found exploration into the world of recipes and cooking. A venture of true joy for me, since I love to be in the kitchen cooking. It’s twice as nice to be in the kitchen when my wonderful husband is there to spend time with me.
Even when I am not looking *cough* my best *cough*.
Easter Sunday itself was pretty relaxing and uneventful, which personally, is the way I love to spend it. DH made the ham and mashed potatoes, and I made garlic green beans, pineapple stuffing, and orange salad. Good separation of duties. And while we were busy in the kitchen, the kids were happily enjoying time with Pop-pop and Pat.
I decided to post DH’s ham recipe because it was simple with minimal ingredients, but had exceptional flavor.
Brown Sugar and Pineapple Glazed Ham
1 (6 pound) fully cooked, bone-in ham
1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar
1. Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
2. Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
3. Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
4. While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.
5. Pour about half the glaze evenly over the ham and pineapple about 1 hour before the end of baking; pour the rest over the ham about 30 minutes before the end of baking.

The pineapple juice and brown sugar mixture allowed the smokiness of our bone-in ham to come through. The glaze wasn’t thick like syrup, so it didn’t make everything so sticky and sweet. Everyone really enjoyed the fresh pineapple that was layered on top of the ham. Plus, I was able to dice the remaining pineapple to use in my pineapple stuffing. Fresh ingredients make for better tasting food.
