Maple Bacon Stuffed French Toast

Ingredients
  • 12 slices of potato bread
  • 6 eggs, beaten
  • 1½ Cups natural vanilla creamer
  • 1½ Tablespoons maple syrup
  • ½ teaspoon maple flavoring
  • Filling
  • 8 ounces cream cheese, softened
  • 3 Tablespoons pure maple syrup
  • 1 Teaspoon imitation maple flavor
  • 8-10 strips crisp, cooked Hormel Black Label Bacon, crumbled (reserve 2-3 Tablespoons of bacon pieces for topping)
  • Glaze
  • 1 Tablespoon unsalted butter
  • ⅓ Cup Confectioners sugar
  • 1 Tablespoon of natural vanilla creamer
Instructions
  1. Prepare 5 mini loaf pans, evenly coat with non-stick baking spray.
  2. In a medium bowl, mix softened cream cheese, maple syrup and maple flavoring.
  3. Add crumbled bacon to cream cheese mixture and combine thoroughly.
  4. Spread 1 slice of potato bread with bacon cream cheese mixture and top with second slice to make a sandwich.
  5. Repeat to make five more sandwiches.
  6. Using a bread knife, slice each sandwich into cubes, and place in the prepared mini loaf pans.
  7. It's ok if a little cream cheese mixture squishes out as you cube the sandwiches. It’s all going to get all melty anyway.
  8. In a large measuring cup, mix together the beaten eggs, creamer, maple syrup and maple flavoring.
  9. Pour mixture evenly over the cubed sandwich pieces in the five loaf pans. Press sandwich cubes down slightly to make sure all pieces are fully submerged in the egg mixture.
  10. Cover with plastic wrap tightly and refrigerate for 30-45 minutes (or overnight) until all liquid is absorbed into the bread.
  11. When ready to bake the French toast, remove mini loaf pans from the fridge, and place on a large baking sheet.
  12. Preheat oven to 375°F
  13. Remove plastic wrap and bake French toast loaves in oven for 30-45 minutes or until each loaf is firm in the center to touch and golden brown.
  14. Remove from oven, let set for 5 minutes.
  15. Prepare the glaze
  16. Melt butter in small glass bowl.
  17. Add confectioners sugar and vanilla creamer and stir until until opaque and a smooth consistency.
  18. Drizzle glaze over warm stuffed french toast and top with additional crumbled bacon if desired.
  19. Serve and enjoy
