Ingredients
  • 3 large Granny Smith apples diced (1/4 inch cubes)
  • 3 Tablespoons butter
  • ¾ Cup light brown sugar
  • ½ Cup Gallo Family Vineyards Apple & Caramel holiday white blend
  • 1½ teaspoons of cinnamon
  • ¼ teaspoon salt
  • ¾ Tablespoon corn starch
  • 1 teaspoon vanilla extract
  • 10 unwrapped caramels diced into small squares
  • 1 box puff pastry
  • 1 egg beaten
  • Caramel sauce for drizzling
Instructions
  1. In a large sauce pan, melt butter over medium heat.
  2. Add brown sugar, salt, vanilla and cinnamon and cook while stirring until sugar is melted.
  3. Add apples and Gallo wine to brown sugar mixture and cook until apples are tender and sauce is reduced (10-15 minutes).
  4. Add caramel bits and stir until completely melted and combined with the apple mixture.
  5. In a small bowl, stir together cornstarch and 1 tablespoon cold water to form a slurry.
  6. Pour cornstarch slurry into apples, stir to combine thoroughly, and cook for another minute or two until sauce thickens. Remove from heat to cool.
  7. When apple mixture is completely cooled, preheat the oven to 400 degrees F.
  8. Unfold puff pastry sheets on a parchment paper covered baking sheet and cut each sheet into 9 squares. You will have 18 squares. Use two baking sheets if necessary.
  9. Spoon about 1 Tablespoon of the apples mixture onto the center of each square.
  10. Fold pastry dough over from corner to corner into a triangle shape and press edges together with a fork to seal.
  11. Brush turnovers lightly and evenly with beaten egg.
  12. Bake for 20-25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool turnovers, drizzle with additional caramel sauce or powdered sugar and serve.
