Broccoli and Parmesan Potato Pancakes

Ingredients
  • 12 oz Simply Potatoes Mashed Potatoes
  • 1 Cup steamed broccoli florets, chopped small
  • ¼ Cup grated Parmesan cheese
  • ½ teaspoon salt
  • 2 Tablespoons butter
  • Additional Parmesan cheese for topping
Instructions
  1. In a large bowl add mashed potatoes, broccoli, salt, and Parmesan cheese. Stir to thoroughly combine ingredients.
  2. Heat large skillet over medium heat, add butter and melt.
  3. Scoop about ¼ Cup of the potato mixture into your hands and shape into a pancake.
  4. Place pancake into skillet and fry about 3-4 minutes (or until brown and crisp).
  5. Flip pancake to fry second side about an additional 3-4 minutes.
  6. The pancakes will be heavy, so smaller is definitely better than larger. Mine were large and a little difficult to flip without cracking the delicate Parmesan crust.
  7. Repeat the process forming and cooking pancakes until all of the potato mixture is gone.
  8. Sprinkle with additional Parmesan cheese and serve immediately.
