A toasty, warm peppermint mocha latte is one of my favorite winter treats, but now that it’s Summer I find myself missing one of my favorite flavor combinations. To satisfy the craving I recently started enjoying International Delight Iced Coffee. A simple quarter of a teaspoon of peppermint extract added to the mocha flavor is a fabulous pick me up in the morning. Last week the idea struck me to try something new with my International Delight Iced Coffee and I made these Peppermint Mocha Pudding Parfaits!
There is something so pretty about a layered dessert. These Peppermint Mocha Pudding Parfaits are cool, refreshing, and perfect for a warm summer evening. I love the cooling mouth feel from the addition of the peppermint extract. They taste like the chocolate covered peppermint candies, but with extra richness and depth due to the added coffee flavor.
I whisked instant pudding with the Mocha flavored International Delight Iced Coffee and a little peppermint extract.
This dessert could not be easier to throw together for a quick weeknight dessert, but still fancy enough to serve to guests When you layer the pudding and whipped topping. The parfaits look super cute made in these mini dessert cups, but if you wanted a full sized dessert you could easily use your favorite size of small mason jars.
International Delight Iced Coffee brings the coffeehouse into your home. I love that it’s ready to drink and needs no prep time. Just shake the contents of the carton to thoroughly blend, open and pour over ice into a glass. There are eight sweet and creamy servings in every half gallon carton. That’s a total bargain compared to stopping my local coffee shop to buy an iced coffee drink. International Delight Iced Coffee comes in original flavor, Caramel Macchiato, Mocha and Vanilla.
- 1½ cups of international delight mocha iced coffee
- One package instant chocolate fudge pudding (4½ cup serving size box)
- ½ teaspoon peppermint extract
- One cup whipped topping
- Optional instant coffee granules for topping
- Combine pudding with cold International Delight Mocha Iced Coffee and whisk for two minutes.
- Place pudding in refrigerator to set according to box directions.
- In serving dessert cup or small mason jar add the first layer of Peppermint Mocha pudding into the bottom.
- Next add layer of whipped topping.
- Next add a second layer of Peppermint Mocha pudding
- Top with small dollop of whipped topping.
- Repeat for the number of dessert cups as desired
- Sprinkle dollops of whipped topping with a few crushed granules of instant coffee.
- Serve immediately.
- You could easily make 12-15 mini dessert cups with this recipe.
