Pepperoni Bread for #PotluckforChristy @SouthernPlate

Today is a special day. I am participating in a virtual pot luck for the lovely Christy Jordan from Southern Plate.  Christy has long been an inspiration to many food bloggers, myself included.  Robin, from Simply Southern Baking, thought it fitting to create a virtual pot luck as a  fun way to give support back to Christy in her journey back to wellness.  For those of you that don’t know, Christy had an accident while horseback riding, and suffered multiple fractures in both legs.  Even while sharing snippets of the story, Christy keeps her sense of humour.  I only wish that I would show that much courage, faith, and humor when faced with anything remotely similar.  So for Christy, I am sharing a deliciously easy Pepperoni Bread recipe.

This recipe is simple enough that anyone can make it with a few store bought ingredients.  If you are up to the challenge, feel free to start out with homemade pizza dough that we use.  If you want to take it easy, just grab some from the bakery section of your local grocery store.  I have no shame grabbing some pre-made pizza dough when I am exhausted from a long week at the office.

Which ever dough you decide to use, flatten or use a rolling pin to stretch it out into a big square.  Make sure to flour the surface you are working on so the dough does not stick and accidentally tear.  Next top it with as much shredded mozzarella cheese as you like (or as little said NO ONE EVER).  Third, add a generous layer of pepperoni slices, and an additional layer of shredded cheese and begin rolling from the bottom towards the top.  I add the extra layer of shredded cheese so it will bake into the dough on both sides of the pepperoni when rolled.

Finish rolling the dough, and pinch the seams to seal.  Be sure to cut a few steam vents in the top of the dough to allow the moisture to escape.  You won’t want and burst seams when baking in the oven.  We want all that baked in goodness from the cheese and pepperoni to flavor and soak into the dough on the inside.

Once fully baked, remove from oven and allow to cool before slicing and serving.  You will have a much easier time versus trying to slice the gooey cheese filled bread while piping hot from the oven.

Ingredients
  • 1 batch homemade pizza dough or 16 oz package of pre-made pizza dough
  • 8 oz bag of shredded mozzarella cheese
  • 7 oz bag of sliced pepperoni
  • 2-4 Tbs of your favorite flavored olive oil
  • 2 tsp Garlic powder
Instructions
  1. Preheat oven to 400 degrees F
  2. Lightly dust your dough work surface with flour
  3. Flatten your dough using a rolling pin (or your hands) to stretch it out into a big square.
  4. Top dough with 4 oz of shredded cheese
  5. Add a generous layer of pepperoni slices
  6. Add an additional layer of shredded cheese
  7. Begin rolling the dough from the bottom end towards the top
  8. Keep rolling the dough towards until shaped into a loaf.
  9. Pinch the side and top seams to seal.
  10. Cut a few steam vents in the top of the dough to allow the moisture to escape.
  11. Brush the outside of the dough with flavored olive oil to coat lightly
  12. Sprinkle garlic powder on the outside of dough
  13. Place in oven and bake 20-30 mins (or until outside of dough is evenly browned and crisp)
