The hustle and bustle of the holidays is in full swing. Entertaining at this time of year can be exhausting, but it doesn’t have to be if you set limits for yourself.  I try and maintain a good balance of hosting big parties with equal small gatherings.  For the intimate get-together, my preference is dessert and after dinner drinks.  There is nothing like chatting with close friends over a warm mug of tea and enjoying some Christmas cookies.  What’s even better?  Combining the two and serving up these delicious Spiced Chai Tea Cookies.

My kitchen was filled with a fabulous aroma of exotic spices while baking these cookies, and I am all about having a stash of unique homemade treats to serve unexpected guests around the holidays.  Not only do the guests get to enjoy cookies while they visit, but I usually have enough on hand to send a  small box of cookies home with them for later too.  These spiced chai tea cookies are a tasty balance of sweet and spice.  This recipe was only slightly modified from Bigelow Tea’s recipe for Vanilla Drop Cookies, by substituting the flavor of tea.  You can probably substitute your own favorite flavor of tea to create your own unique cookie.

Even though my parents and siblings (with their own families) all live on the sunny gulf coast of Florida, I’m lucky that my parents usually come to visit over the Christmas holiday.  This year they will be arriving the day after Christmas.  You can imagine the temperature difference they need to prepare themselves for coming to visit, so I make sure to stock the cabinet with a variety of warm drink options to keep them toasty warm on the inside.

My last trip to Walmart I was sure to stock up on some of my mom’s favorite flavors of Bigelow Tea, as well as my favorites, the Spiced Chai and Peppermint herb tea.   In the morning I need caffeine to get me moving, but in the afternoon and evening I limit my intake and prefer to keep a variety of herbal teas on hand.  There is nothing like wrapping cold hands around a piping hot mug of tea and snuggling up with a blanket to watch the Christmas specials with the kids.  A few cookies to munch on while we are watching never hurts either.

Many of us put pressure on ourselves to have everything exactly perfect for the holidays. I’m here to remind you that your friends and family love you for who you are, not what your house looks like, or how pristine your Christmas tree is decorated.  Slow down and take some time to really enjoy your friends and family and eat some Christmas cookies.  Life’s too short to skip dessert.

Spiced Chai Drop Cookies

Ingredients
  • ¼ cup whipping cream
  • 6 Bigelow® Spiced Chai Tea Bags
  • ½ cup of butter, softened
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 egg
  • 1 ½ flour, sifted
  • ½ teaspoon salt
  • 1 teaspoon baking powder
Instructions
  1. Preheat oven to 350ºF
  2. Heat whipping cream in the microwave for 1 minute or until it comes to a low boil.
  3. Remove cream from microwave and add tea bags.
  4. Let tea bags steep for 5 minutes. Remove bags and squeeze any excess cream and set aside.
  5. In large bowl, cream butter, vanilla and sugar until light and fluffy.
  6. Add egg and mix until thoroughly combined.
  7. In a second large bowl, sift flour, salt and baking powder.
  8. Add flour mixture and chai flavored whipping cream alternately to butter mixture and combine thoroughly.
  9. Using a ½ inch cookie scoop, place cookie dough onto greased baking sheet about 2 inches apart.
  10. Bake for 12-15 minutes or until golden brown.
