Like many people I am kicking off the new year trying to eat a little healthier. When DH forgets to add a vegetable with dinner, I am quick to grab a steamer bag from the freezer and pop it into the microwave to round out the meal. My family knows there should be at least one vegetable on the table at every meal, but with young ones, especially my picky 5 year old, I sometimes need to get creative. For instance, I can cut up fresh carrot sticks,and they will sit in the fridge untouched. However, I cut those same carrots into thinly sliced coins and everyone snacks on them constantly. It’s all in the preparation. Make fruit and vegetables easier for your family to access and they will eat them.
Crazy as it is, I don’t fix what’s not broken, but meal time is getting a little boring. I decided to search out some new recipes to try.
