Quick & Easy Pork and Vegetables

When we were a two income family, most nights there was little time to worry about what we were going to eat for dinner. I was all about the quick and easy. Make ahead meals were great, but sometimes even the most organized mom forgets to take the pre-made components out if the freezer to thaw in time.

This is one of easiest dishes to prepare.
I cut major prep time for the meal using 2 secret weapons.

A. Pre-made sauce found at a local asian market

B. Frozen steam in bag vegetables

To start, I chop boneless pork chops into bit size pieces and saute in a few teaspoons of olive oil and 2-3 cloves of minced garlic. To save time, I always have the jarred minced garlic on hand in the refrigerator.

Once the meat is completely cooked, I add the sauce, toss to coat and heat thoroughly. I have found that 1 packet works well with about 1 lb of meat.

Next, microwave the steam in bag vegetables according to the package directions, then quickly toss with the meat and sauce.

Serving is simple.
To make the meal complete, serve over brown rice.

I find keeping extra pre-made brown rice in the freezer ready to grab is a bonus time saver. Just reheat in the microwave and it’s ready to go. Oh, and if you missed how to make the baked brown rice, check out the post here.

The vegetable medley’s hint of ginger is complimented by the sticky sweet honey and garlic notes of the sauce. The entire meal from start to plating can be done in about 30 minutes. It’s a great option for a weeknight.
