Well it’s here and I am not ready. Tomorrow I will have a third grader getting on the bus to start the new school year, and I am not sure how that happened. At this point, I am not even sure where Summer went. We have struggled for sunny days this Summer, but in spite of the rain, we’ve been able to enjoy some fun family adventures. I personally do not like to grill in the rain, so it’s made it tough for us to enjoy our Summer staple of hamburgers and hot dogs, but isn’t necessity, the mother of invention? Hence the creation of my Puff Pastry Franks and Beans.

We are lucky to have plenty of green space where we live. It makes it easy to spontaneously throw together a picnic, and spend the afternoon hiking. The kids love exploring local streams and wooded areas to find tadpoles, fish, and exotic looking plants.

But when the rain drives us out of the woods and indoors, and you are craving the flavors of family BBQ picnic, grab these 4 simple ingredients.  They will change how you think about franks and beans in the future.

The longest part of this meal prep was thawing the non-dairy puff pastry shells.  I let the shells thaw in the fridge over night, so they were ready for me to use the next day.  Pop the shells in the oven to bake, while you prepare your vegetarian beans and hot dogs.  I doctored my beans with a little barbecue sauce, but you can change up the flavors you prefer, or even use them right out the can.  No shame in that at all!

Dice up your Hebrew National Kosher beef franks, stir into your beans, and heat the combined mixture.  Once the mixture is heated thoroughly, your shells should be done baking.  Remove the cute little lids of the pastry shells and fill with the franks and beans.  Seriously.  This could not get any easier, and they look all fancy, yo.  I just love them!  So do my friends on Instagram.

Since we are in the South, the heat is typically unbearable in the Summer months. In the past we found ourselves heading to bike in the early weekend hours, so we could beat the hottest part of the afternoon. We would save those hours for cooling off in the neighborhood pool. With all the overcast weather, we were able to change up the normal routine, but that also usually meant having to skip the pool entirely.  But that’s ok too.  We’ve gotten creative with indoor family activities this Summer as well.

Ingredients
  • 1 can vegetarian baked beans
  • ¼ C barbecue sauce
  • 1 pkg non-dairy puff pastry shells
  • 4 Hebrew National hot dogs, diced
Instructions
  1. Thaw puff pastry according to directions on package
  2. Bake puff pastry shells according to directions on package
  3. In large bowl thoroughly combine beans and diced hot dogs
  4. Heat beans and hot dog mixture in microwave or on stove top until heated thoroughly.
  5. Remove baked shells from oven and remove "lids"
  6. Fill pastry shells with warm franks and beans
  7. Replace pastry shell "lid" on top.
  8. Serve immediately
