I love all things tomato, mozzarella and basil. Such an explosion of freshness!
In the summer when the tomatoes are fresh off a local vine, I would eat caprese salad every day. I even have Baby fighting over the last pieces of tomato on our shared plates! Very few people I know can resist the beautiful layers of tomato, creamy mozzarella, drizzled lightly with balsamic vinegar and olive oil. Occasionally, when I make a caprese salad at home, I choose to use a basil flavored dipping oil if I don’t have fresh basil leaves handy. It’s just as gorgeous and tastes amazing!
