This is a sponsored post written by me on behalf of Hormel Foods. All opinions are 100% mine.

I shamelessly love bacon. However, I completely dislike frying bacon in my kitchen. I feel like it takes days to clear the smell. Now that we are back in the north, the fall weather is rolling in and I could not be happier. Cooler temperatures mean open windows, and that calls for baking some bacon in the oven. Mmmmm…bacon. I’m not sure of a better way to entice our new neighbors into taste testing my latest overnight brunch casserole. Hold on to your hats people because this Maple Bacon Stuffed French Toast is everything!

I mentioned earlier that I bake my bacon in the oven. It’s true and the method is super easy. I often make more than one package of Hormel Black Label Bacon at a time. Since I don’t make bacon that often, my family has a hard time controlling themselves at breakfast time. If I don’t make two packages, the recipe I am usually making will be lacking in bacon. Plus I won’t get any, and the thought of missing out on bacon is too sad to think about.

When experimenting with blending the filling, I decided to go with a combination of pure maple syrup and maple flavoring. I wanted the extra boost of the maple flavor without making the filling too sweet by using all syrup. I wanted the salty, smoky Original hardwood-smoked bacon to complement the sweetness of the cream cheese. All of the BLACK LABEL® Bacon varieties never compromise on quality or taste.

All of the prep work for this casserole can be done the night before, or in the morning before everyone gets out of bed. Hormel products are great to keep on hand to assist in creating quick and easy meals the whole family will enjoy. The easier meal time prep is for me, the more meals per week we spend around the table eating together.

Recipe type: Breakfast / Brunch
Ingredients
  • 12 slices of potato bread
  • 6 eggs, beaten
  • 1½ Cups natural vanilla creamer
  • 1½ Tablespoons maple syrup
  • ½ teaspoon maple flavoring
  • Filling
  • 8 ounces cream cheese, softened
  • 3 Tablespoons pure maple syrup
  • 1 Teaspoon imitation maple flavor
  • 8-10 strips crisp, cooked Hormel Black Label Bacon, crumbled (reserve 2-3 Tablespoons of bacon pieces for topping)
  • Glaze
  • 1 Tablespoon unsalted butter
  • ⅓ Cup Confectioners sugar
  • 1 Tablespoon of natural vanilla creamer
Instructions
  1. Prepare 5 mini loaf pans, evenly coat with non-stick baking spray.
  2. In a medium bowl, mix softened cream cheese, maple syrup and maple flavoring.
  3. Add crumbled bacon to cream cheese mixture and combine thoroughly.
  4. Spread 1 slice of potato bread with bacon cream cheese mixture and top with second slice to make a sandwich.
  5. Repeat to make five more sandwiches.
  6. Using a bread knife, slice each sandwich into cubes, and place in the prepared mini loaf pans.
  7. It's ok if a little cream cheese mixture squishes out as you cube the sandwiches. It’s all going to get all melty anyway.
  8. In a large measuring cup, mix together the beaten eggs, creamer, maple syrup and maple flavoring.
  9. Pour mixture evenly over the cubed sandwich pieces in the five loaf pans. Press sandwich cubes down slightly to make sure all pieces are fully submerged in the egg mixture.
  10. Cover with plastic wrap tightly and refrigerate for 30-45 minutes (or overnight) until all liquid is absorbed into the bread.
  11. When ready to bake the French toast, remove mini loaf pans from the fridge, and place on a large baking sheet.
  12. Preheat oven to 375°F
  13. Remove plastic wrap and bake French toast loaves in oven for 30-45 minutes or until each loaf is firm in the center to touch and golden brown.
  14. Remove from oven, let set for 5 minutes.
  15. Prepare the glaze
  16. Melt butter in small glass bowl.
  17. Add confectioners sugar and vanilla creamer and stir until until opaque and a smooth consistency.
  18. Drizzle glaze over warm stuffed french toast and top with additional crumbled bacon if desired.
  19. Serve and enjoy
