Spring in the south is a fabulous time of year. It’s nice to get outside before the heat and humidity sky rocket. Grilling year round is pretty easy due to the mild temperatures, but when Spring brings its bounty of fresh seasonal fruit and vegetables, that’s when I really smile. Next, I pop the corn in the preheated oven to roast. If you think you will have remaining honey butter, add a few biscuits onto the baking sheet towards the end of the corn’s cooking time. Corn on the cob and biscuits with honey butter? Your family will be smiling from ear to ear for a week.

Honey Butter Oven Roasted Sunshine Sweet Corn

Ingredients
  • 8 ears fresh Sunshine Sweet Corn
  • ¼ Cup Lightly salted sweet cream butter
  • ¼ Cup of your favorite local honey
Instructions
  1. Preheat oven to 400 degrees F.
  2. Line a rectangular baking sheet with foil.
  3. Husk and clean ears of corn.
  4. In a small bowl, stir together softened butter and honey until thoroughly blended.
  5. Slather each ear of corn generously with honey butter and place on baking sheet.
  6. Roast corn in oven for 35-40 minutes, turning occasionally for even cooking.
  7. Remove from oven, slather any remaining honey butter on hot corn.
  8. Serve immediately, but allow to cool to a comfortable temperature before devouring.
