Salads are some of my favorite go to recipes for a quick and easy meal. Sometimes I want the flavors of one of my favorites like this Glazed Pecan, Cherry and Feta Cheese Salad but only have the appetite for a snack. It’s so easy to pop one of the individual single-serve cups into the microwave. In just 60 seconds I have wholesome, fully cooked brown rice ready to stir in my favorite raspberry pecan vinaigrette. I stir the dressing into the rice when it’s fresh out of the microwave so the rice easily absorbs the sweet and tangy flavors of the dressing.

Once the dressing is stirred into the rice, I add diced glazed pecans, dried cherries, and crumbled Feta cheese. This mini rice bowl is the perfect for a quick snack to keep me feeling satisfied so I can focus on work and not feeling hungry.

Glazed Pecan, Cherry and Feta Cheese Raspberry Rice Bowl

Ingredients
  • 1 container Minute® Ready to Serve Rice (brown)
  • 1 Tablespoon Raspberry Pecan Vinaigrette
  • 1 Tablespoon dried cherries
  • 1 Tablespoon chopped glazed pecans
  • 1 Tablespoon crumbled Feta cheese
Instructions
  1. Heat single serve container of Minute® Ready to Serve Rice according to package directions.
  2. Carefully remove rice from microwave and stir in vinaigrette.
  3. Stir chopped pecans, dried cherries and Feta Cheese into rice and combine thoroughly.
  4. Serve and enjoy immediately.
