Easter Brunch Creme Brulee Baked Oatmeal #SundaySupper

Oh, hey Stranger!  How are ya?  Did ya miss me?  I know I missed y’all!

I know I have been a little quiet this week, but as you can see, I have been a little busy. In The Kitchen is sporting some new pink, and it’s just in time for Spring, and an Easter/Passover #SundaySupper celebration.

I have missed participating in the weekly round up of amazing recipes of my #SundaySupper friends. They always share such amazing food all the time…not just on Sundays when we do the themed round ups.  After missing three weeks of joining my friends, I am so happy to share in this week’s theme and present this delicious Creme Brulee Baked Oatmeal.

We celebrate Easter in our house, but it’s pretty low key.  I wrote about starting new Easter traditions two years ago, and coloring eggs and craft time in the sun last year.  I try and make holidays more about the memories we share, versus the stuff the kids get.  I was actually laughed at a bit last week by a friend, when I mentioned I don’t really give the kids much candy for Easter.  Not that I don’t love candy.  I do!  Boy, do I LOVE candy!  And Easter has the BEST candy ever, with Peeps being my all time favorite thing to find in my basket.  Wait.  What was I talking about again?

Oh yeah…Easter traditions!  Enough about the candy.  Since the holiday is pretty low key, I am always on the hunt for good recipes to make for holiday brunch.  They are perfect to fill everyone’s belly, and keep them content until it’s time for dinner.  And hello…I only have to make 2 meals for the day, not three.  That’s a bonus in my book for any holiday.  Moms like to relax too, and that’s where this easy baked oatmeal dish comes into play.

I went indulgent with this warm and hearty baked oatmeal inspired by Tidy Mom’s recipe featured here.  I not only topped the baked oatmeal with the brown sugar the recipe called for, but I topped it with the same amazing creme brulee glaze I drizzled over pancakes here.  Talk about a sweet treat of a brunch dish.  YUM!

The crunchy texture of the broiled brown sugar on top, pairs delightfully with the firm, chewy, baked oatmeal.  I also like that you can alter the sweet level of this dish to your individual preference just by how you decide to top it.  Baked oatmeal bars can easily be made during the week, for a super easy, grab and go, breakfast item.  Convenience without sacrificing flavor.  It’s a win-win.

Easter Brunch Creme Brulee Baked Oatmeal #SundaySupper

Warm and hearty alternative to regular oatmeal.

Ingredients
  • Baked Oatmeal
  • 2 cups old fashioned oats
  • 2 Tablespoons butter, melted
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup Milk
  • 1 cup Crème Brulee flavored creamer
  • 1 cup Chobani greek 0 fat plain yogurt
  • 2 whole large eggs
  • ⅔ cup brown sugar, divided (1/3 cup for topping)
  • Crème Brulee Glaze
  • 1 Tablespoons of butter
  • ¼ Cup powdered sugar
  • 1-2 Tablespoons of Crème Brulee flavored coffee creamer
Instructions
  1. Preheat oven to 350° and grease a 9-inch pan.
  2. Using a large bowl, mix all ingredients, reserving ⅓ cup of brown sugar for topping.
  3. Cover pan with foil, and bake for 20 minutes
  4. Remove pan from oven, remove foil, and return to oven and bake another 25 minutes
  5. Remove pan from oven and turn oven to broil.
  6. Sprinkle top of baked oatmeal with remaining ⅓ cup of brown sugar
  7. Return to oven to broil 3-5 minutes, watching closely so it doesn't burn.
  8. Remove from oven.
  9. Melt 1 Tablespoon of butter in microwave safe dish
  10. Stir in powdered sugar until texture is almost crumbly in texture
  11. Add flavored creamer a little at a time to butter/sugar mixture.
  12. Stir to desired consistency for drizzling. Mixture should be smooth and opaque.
  13. Drizzle glaze over warm sliced oatmeal
  14. Serve.
