Cheesy Ham and Hash Brown Casserole

Recently DH was browsing for new recipes and asked what I thought about making a breakfast casserole. I told him I was game to try anything he was cooking. Ummm…can you say…not looking a cooking gift horse in the mouth?

Personally, I love breakfast foods and brunch. My husband, not so much. He doesn’t eat eggs. He complains bacon is fattening (the nerve), so pretty much an elaborate brunch in our house is breaking out the griddle to make pancakes. I was excited to see what his new journey into breakfast recipes would turn up.

I was pleasantly surprised when he described the hash brown casserole on his to make list. Knowing his love of potatoes I was not surprised about the main ingredient though. If you’re a fan of creamy, cheesy potatoes, then read on for sure.

Ingredients
1 (32 ounce) package frozen hash brown potatoes
8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese
1 1/2 cups grated Parmesan cheese

Directions
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
2. In a large bowl, mix hash browns, ham, cream of potato soup

3. Mix in sour cream and Cheddar cheese.

4. Spread evenly into prepared dish.

5. Sprinkle with Parmesan cheese.

6. Bake 1 hour in the preheated oven, or until bubbly and lightly brown and as gorgeous as this!

Does this not look full of cheesy creamy goodness?  
Trust me.  It is.

I would prefer the dish next time as a side with maybe some type of eggs, but that’s just me. My parents and Joe were all fully satisfied with the item as a single entree. It would definitely be a great addition to a pot luck brunch if you happen to be giving or going to one.
