Wine and cheese go together like peanut butter and jelly. It’s a perfect pairing, but what happens when you invite crispy, buttery bread into the crazy mix? You create a grilled cheese party like no other! This week the Sunday Supper crew is celebrating National Grilled Cheese Month with Gallo Family Vineyards. What am I bringing to the party you ask? Why my fabulous Cafe Zinfandel Caramelized Onion Grilled Cheese of course!

A grilled cheese to me is comfort food. I know I can make one super fast and the result is always the same…delicious. When I have time to experiment, I love to try making new combinations of flavors in between those slices of toasted, buttery bread. I’ve even experimented with a Blueberry Breakfast  Grilled Cheese, but since we are cooking and pairing with Gallo Family Vineyards wine this week, my latest grilled cheese is definitely a meal for later in the day.

Currently I am slightly obsessed with caramelized onions. I have been using them for a ton of recipes lately, plus of course sampling them right out of the pan. I wanted to make a grilled cheese with them knowing their sweet, butter profile would pair lovely with Gallo Family Vineyards Cafe Zinfandel. I prefer chilled, sweet wines, and the Cafe Zinfandel is perfect for me with its strawberry, raspberry and watermelon notes. Not only would the wine go well being cooked in with the onions, but served in glass on the side as well. Hello, fabulous weekend lunch!

Caramelized onions were a definite in my sandwich, so I chose an herb and garlic gournay cheese to pair with them. Gournay cheese is a soft, spreadable cheese made of cream, it is sweet and mild tasting, and most popular flavored with garlic and herbs or french onion. Sounds like a winner to me to complement the caramelized onions.  Lastly I needed a hearty bread to stand up to the grill and toast nicely. Sourdough from my local grocery hit the mark and soon my grilled cheese creation was complete. I can just imagine the aroma of this sandwich toasting in the pan.

Cafe Zinfandel Caramelized Onion Grilled Cheese

Ingredients
  • For Caramelized Onions:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 large sweet onions, sliced thin
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ¼ cup Gallo Family Vineyards Café Zinfandel
  • For Sandwich:
  • 2 Tablespoons softened butter
  • 2 slices sourdough bread
  • 2 oz gournay garlic and herb soft cheese
  • ¼ cup Caramelized onions
  • 2 Tablespoons softened butter
Instructions
  1. For Caramelized Onions:
  2. In a large skillet over medium heat, melt butter and blend in olive oil.
  3. Add sliced onions to skillet and toss to coat in melted butter mixture.
  4. Spread the onions out evenly in the pan and let cook, stirring occasionally.
  5. After about 30 minutes, sprinkle in salt, sugar and wine.
  6. Continue to cook another 20-30 minutes, until onions are brown in color, sweet to taste, and liquid is gone. Don’t rush this step. Caramelizing onions takes time. Be patient. The flavor is worth it.
  7. When the onions are done, remove from heat and set aside to cool slightly.
  8. For Sandwich:
  9. Next prepare the sandwich by spreading the soft garlic and herb gournay cheese on the inside of two slices of sourdough bread.
  10. One on slice of bread, top cheese with caramelized onions, and place the second slice of bread on top (cheese side facing in of course).
  11. Heat frying pan to medium heat
  12. On bread slice of sandwich facing up, spread softened butter evenly and place the sandwich into the preheated pan, buttered side down.
  13. Carefully spread softened butter on remaining bread slice facing up in pan.
  14. Continue to grill sandwich until the first side of the sandwich is golden and cheese starts to warm.
  15. Use spatula to flip sandwich and cover pan with lid.
  16. Continue to grill sandwich to brown second side and heat cheese thoroughly.
  17. When golden brown on both sides, remove from pan, slice in half, and serve with a glass of Gallo Family Vineyards Café Zinfandel.
