Our body needs iron to build healthy muscles and maintain healthy blood.
I have been making this simple baked spinach dish for years. It freezes well and is a fantastic grab and go breakfast, lunch, side dish or snack.
1 box frozen spinach (thawed and drained)
1/2 C shredded mozzarella cheese
1 C part skim ricotta cheese
3 cloves garlic (chopped fine)
1/2 tsp salt
1. Preheat oven to 350 F
This is possibly one of the easiest dishes in my stash of go to recipes. I prefer to use the rectangular baking dish so I can cut the spinach pie into small squares for ease of portability. The consistency is similar to quiche, but heavy on the spinach. The garlic gives the dish a good flavor, but you may want to make sure you have some mints handy for after eating. Just in case.
