Bacon, Egg and Cheese Hash Brown Casserole

- 10 large eggs
- One package simply potatoes shredded hashbrowns
- 8 ounces shredded cheddar cheese blend
- 2 cups cooked bacon, chopped
- Salt and pepper to taste
- Preheat oven to 400°F
- Prepare in 9 x 13 baking dish it's a light coat of olive oil or your favorite nonstick spray
- In a Large bowl combine shredded hashbrowns, chopped bacon pieces and shredded cheese. Stir to combine thoroughly.
- Transfer hash brown mixture into 9 x 13 baking dish and spread evenly.
- In a large bowl crack 10 large eggs and stir with a fork to scramble.
- Pour eggs evenly over potato mixture.
- Place baking dish in the oven and bake for 20 minutes.
- Raise oven temperature to 425° F and continue baking for 10-15 more minutes until top layer of hashbrowns are evenly browned.
- Remove casserole from the oven, let stand five minutes, and serve with your favorite breakfast sides like biscuits and cut fruit.
