Taco Turnovers

- 1 lb extra lean ground beef
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 1 pkg (16 oz each) Velveeta®, cut into ½-inch cubes
- 1 pkg puff pastry (thawed)
- 1 egg
- Preheat oven to 375 degrees F
- Prepare large baking sheet with a layer of parchment paper
- Preheat large sauce pan over medium heat. Add ground beef and cook until no longer pink.
- Once meat is cooked, add the can of undrained Ro*Tel tomatoes and Velveeta cubes to saucepan.
- Stir until cheese is completely melted and all ingredients are thoroughly combined.
- Remove from heat, set aside and prepare puff pastry.
- Unfold puff pastry sheets on prepared parchment paper lined baking sheet.
- Cut each pastry sheet into 9 equal squares (about 2 inches ea).
- Place a Tablespoon of the beef queso mixture in the center of each square.
- Fold pastry square to form a triangle and seal edges with a fork.
- In a small bowl, beat one egg. Using a pastry brush, lightly coat each triangle with egg wash.
- Bake triangles in oven for 13-17 minutes until golden brown and pastry has puffed.
