Pumpkin Chocolate Chip Oatmeal Cookies

- 2 Cups all-purpose flour
- 1½ cups old-fashioned oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 cup pure pumpkin (not pie filling)
- 1 egg, room temperature
- 2 tsp vanilla extract
- 1 Cup semi sweet chocolate mini chips
- In a large bowl combine dry ingredients - flour, oats, baking soda and spices, set aside
- In second large bowl, cream together butter and both sugars
- Add egg and mix until thoroughly
- Add pumpkin and vanilla extract and continue mixing
- Slowly mix in oats, flour and spices and continue mixing until combined
- Stir in mini chocolate chips
- Chill dough for at least 2 hours
- Preheat oven to 350°F
- Drop heaping tablespoon-size balls of cookie dough about 2 inches apart on prepared baking sheets
- Bake for 15-17 minutes or until cookie is no longer soft in the middle
- Remove from oven, and let cool on baking sheet 3-4 minutes
- Transfer to a wire rack, and let cool completely
