Ingredients
  • 2 Cups all-purpose flour
  • 1½ cups old-fashioned oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 cup pure pumpkin (not pie filling)
  • 1 egg, room temperature
  • 2 tsp vanilla extract
  • 1 Cup semi sweet chocolate mini chips
Instructions
  1. In a large bowl combine dry ingredients - flour, oats, baking soda and spices, set aside
  2. In second large bowl, cream together butter and both sugars
  3. Add egg and mix until thoroughly
  4. Add pumpkin and vanilla extract and continue mixing
  5. Slowly mix in oats, flour and spices and continue mixing until combined
  6. Stir in mini chocolate chips
  7. Chill dough for at least 2 hours
  8. Preheat oven to 350°F
  9. Drop heaping tablespoon-size balls of cookie dough about 2 inches apart on prepared baking sheets
  10. Bake for 15-17 minutes or until cookie is no longer soft in the middle
  11. Remove from oven, and let cool on baking sheet 3-4 minutes
  12. Transfer to a wire rack, and let cool completely
