As a working mom of two, my Girls’ Nights Out are usually tied in some shape or form to a blog event. Between the office, kid activities and media events my schedule can get pretty hectic. When life starts to get a little too busy, I plan a little down time with a fun Girls’ Night In with all the essentials – a great movie, snacks and a festive drink to serve like this Lemon Raspberry Acai Smoothie.

Hosting a great Girls’ Night In is all about simple planning. I personally like to offer an assortment of regular beverages, plus I create one signature drink just for fun. My one signature drink is usually a frozen option. Don’t ask me why, but I think frozen drinks are just so much more festive. Plus I am always looking for an excuse to fire up my Margaritaville machine. It creates such a fine shave ice that blends perfectly in a variety of drinks.

For my Lemon Raspberry Acai Smoothie, I simply blend a mixture of Tropicana Trop50’s Raspberry Acai juice, frozen vanilla greek yogurt, and a sprinkle of sugar free lemonade drink mix. What results is a sweet and tangy refreshing smoothie bursting with flavor. Perfect when you want to indulge in a little sweet treat, but don’t want all the extra calories. I even made the smoothies into little mini versions using dessert cups. Seriously…aren’t they the cutest?

Ingredients
  • ½ cup Tropicana Trop50 Raspeberry Acai
  • 1 cup vanilla Greek frozen yogurt
  • ½ cup shaved/crushed ice
  • ½ teaspoon sugar free lemonade drink mix
  • Lemon slices for garnish
Instructions
  1. In a clean blender jar, add Trop50 Raspberry Acai, Greek frozen yogurt, shaved/crushed ice, and lemonade drink mix.
  2. Blend until smooth.
  3. Poor into regular or mini glasses.
  4. Garnish with lemon slices and dollop of whipped cream if desired.
  5. Serve.
